Making your own popsicles allows you to control the ingredients, ensuring a healthier option than many store-bought popsicles and avoiding any food allergies that you or your family members may have. Plus, it’s a great way to use up ripe strawberries from your local farm or farmer’s market.

Substitutions

  • Sweetener - Instead of agave syrup or nectar, you can use maple syrup, honey, or even a simple syrup. Adjust to taste if you prefer your popsicles sweeter or less sweet. 
  • Lemon Juice - Lime juice or orange juice can be great substitutes. Each will give a slightly different but equally delicious flavor.
  • Strawberry puree - If you have some strawberry puree on hand from last year's season, you can use it in place of the whole strawberries.
  • Dairy - For a creamier texture, use full-fat coconut milk, vanilla yogurt, or Greek yogurt in place of water. It will be more like a ice cream bar than a juice bar.

The ingredients needed to make strawberry popsicles include whole strawberries, lemons, agave syrup and water,

Instructions

Step 1. Prep the Strawberries - Remove the stems from the strawberries and wash them thoroughly.

Step 2. Blend the Ingredients - In a blender or food processor, add the strawberries, water, lemon juice, and agave syrup. Blend until the mixture is smooth.

Step 3. Pour and Freeze - Pour the strawberry mixture into your favorite popsicle molds. Insert popsicle sticks and freeze for at least 6 hours. This is my favorite popsicle mold because it has a handy top that holds the sticks in place. Since this recipe makes 12 popsicles, you may need to purchase 2 molds.

Storage and Freezing

For the best taste, consume them within a month. For ease, I keep them in the popsicle mold. If you are making the using paper dixie cups, you may want to transfer them to a freezer storage bag.

Pro Tip

For the best results, use ripe strawberries at their peak of freshness. This ensures your popsicles are bursting with flavor.

If fresh strawberries aren't available, frozen strawberries are a great substitute. Do not thaw them before using them. They will become mushy.

Can I make these without a popsicle mold?

Yes, you can use paper cups, or an ice cube tray. Depending on the size, it may take less time for them to freeze. Just adjust the freezing time accordingly.

How do I prevent the popsicle sticks from floating?

If you aren't using a mold with a cover, you can cover the molds with aluminum foil or plastic wrap, then poke the sticks through. This helps keep them in place.

Can I add other fruits?

Absolutely! Feel free to experiment with different fresh fruit like blueberries, raspberries, peaches, or mangoes.

Can I use granulated sugar in place of the agave nectar?

Granulated sugar would be a more tricky substitution for a sweetener because agave is sweeter than sugar. The general rule of thumb is to replace ⅔rds cup of agave with 1 cup sugar. For this recipe, I would recommend trying ½-3/4 cup of granulated sugar if you're looking to replace the agave. You can give it a taste test before freezing the popsicles.
