If you grew up loving Golden Grahams cereal, you probably remember when this Golden Graham Bars recipe was printed right on the cereal box. 

My mom used to make these Golden Graham s'mores bars when I was a kid, and it was always such a treat to come home and see a pan of them waiting on the counter.

They’re gooey, chocolatey, and full of that toasty graham cracker flavor that makes Golden Grahams such a favorite cereal. Think of them like a cross between s’mores and a Rice Krispie treat.

They have all the flavors of a classic s’more - crunchy graham cereal, gooey marshmallows, and melted chocolate, but without the campfire. Check out my collection of Desserts with Marshmallows for even more sweet inspiration.

You only need a few pantry staples, and in about an hour, you’ll have sweet, chewy squares ready to enjoy.

Why You’ll Love These Golden Grahams Treats

  • It's a quick, no bake treat.  It's ready in a little over an hour. Just melt, stir, and set.

Natalie's Tips

  • Use the butter wrapper to grease your pan instead of cooking spray if you prefer.
  • If you don't have a pot large enough to combine everything, you can melt the marshmallows and chocolate on the stovetop. Put the cereal in a large mixing bowl and pour the marshmallow mixture over the cereal, and mix until coated.
  • For neat squares, LIGHTLY press the mixture into the pan with lightly buttered hands or parchment paper. Don't press too hard. It will create hard treats.
  • Keep a few extra marshmallows out of the mixture and add them to the top of the bars once they’re pressed into the pan.
  • If you want them extra gooey, pop individual bars into the microwave for about 15 seconds until the chocolate and marshmallows are slightly melted.
  • Cut them into 12 larger bars or up to 20 smaller servings, depending on the occasion.

Substitutions and Variations

  • Swap milk chocolate chips with semisweet chocolate chips or even white chocolate.
  • Stir in a spoonful of peanut butter to the melted mixture for a nutty twist.
  • Instead of corn syrup, you can use ¼ cup of granulated sugar and 1 Tablespoon of water.

Ingredients

The ingredients needed to make the Golden Grahams Bars include light corn syrup, mini marshmallows, Golden Grahams cereal, butter, vanilla, and milk chocolate morsels.

How To Make Golden Graham Bars

Step 1. Spray a 9" x 13" baking dish with non-stick cooking spray or grease it with butter. Set aside.

Step 2. In a large pot, melt butter over medium heat. Add most of the marshmallows (reserving about one cup of marshmallows for later) and stir until almost completely melted. I use this 7.3-quart cast iron pot when I am making these bars.

Step 3. Mix in the milk chocolate chips and corn syrup, stirring until smooth. Remove from heat and stir in vanilla extract.

Step 4. Add the Golden Grahams cereal to a large bowl, then pour the melted marshmallow mixture over the top. Stir gently until the cereal is evenly coated.

Step 5. Add the remaining marshmallows to the cereal mixture and fold gently until incorporated.

Step 6. Press the cereal bar mixture into the prepared pan in an even layer. Let the bars cool at room temperature for about an hour. Cut into squares and enjoy.

FAQs

How do I keep them soft?

Store them in an airtight container or ziploc bag so the marshmallow treats don’t dry out.

Can I use parchment paper instead of cooking spray?

Yes, lining your pan with parchment paper makes cleanup easier and helps lift the bars out in one piece.

What if I don’t have corn syrup?

You can replace corn syrup with ¼ cup of granulated sugar and 1 tablespoon of water.

  • 10 ounce bag mini marshmallows divided

Storage
Store leftover bars in an airtight container at room temperature for 2-3 days. 
For longer storage, wrap well and freeze for up to a month, though they’re best enjoyed fresh.
